Chickpea Salad Sandwiches

This creative recipe is super easy and great to meal prep for the week. eat it throughout the week in sandwiches, wraps, on salads, or even with pasta! ⁣

1 (540mL) can chickpeas, rinsed and drained⁣

1/2 cup diced celery⁣

1/4 cup minced red onion⁣

1 small carrot, grated⁣

1/4 cup mayo ⁣

1 teaspoon dijon mustard⁣

1 tsp @truly.turmeric with Black Pepper⁣

1 teaspoons curry powder⁣ (optional)

Salt and pepper, to taste⁣

1. Add your chickpeas to a large bowl and mash roughly with a fork or potato masher. ⁣

2. Add in the rest of the ingredients and mix until well combined. ⁣

3. Store in an airtight container in the fridge and enjoy for lunch throughout the week
