This amazing corn curry recipe comes from Lella Umedaly, Umeeda's mother and my grandmother. Fondly known as Mamajee, Lella was an incredible cook, entrepreneur, volunteer, and all-round trail blazer. She recently passed away on June 6, 2020 and this recipe is in memory of her.
Corn is plentiful in many parts of the world, especially in Belize. The corn is so good and we love making this curry when it's in season. Give it a try!
