Ingredients – Turmeric Tempeh
1 block Tempeh, cubed
1 inch Fresh ginger, grated
1 Tbsp Truly Tumeric
1 Tbsp Coconut yogurt
1⁄2 tsp Cayenne pepper
1⁄2 tsp Black pepper 1⁄4 tsp Sea Salt
Ingredients – Turmeric Tomato Sauce
1 clove Garlic
1⁄2 tsp Fresh ginger, grated 1 tsp Truly Turmeric
1/4 tsp Coriander 1/4 tsp Cumin Pinch Cayenne Pinch Sea salt
12 Cherry Tomatoes
12 Cherry tomatoes
Directions
1) In a small bowl,
2) Add the Tempeh to the marinade and mix until all sides of the cube has been coated
3) Preheat the oven to 350F and prepare a baking sheet with parchment paper
4) Insert a skewer into the Tempeh cubes
5) Place each skewer onto the parchment paper lined baking sheet
6) Bake for 25-30 minutes, flipping them halfway through
To make the Turmeric Tomato Sauce; In a small saucepan on medium heat, sauté the garlic until fragrant. Add the ginger, Truly Turmeric, coriander, cumin, and cayenne. Stir well and continue to sauté until aromatic. Add the cherry tomatoes and bring to a boil. Once boiled, turn the heat down to low-medium and simmer for 10 minutes or until the sauce thickens add all the ingredients for the Turmeric Tempeh (except the Tempeh) and stir until combined
Serve the Turmeric Tempeh with the Turmeric Tomato Sauce and enjoy!
