Turmeric Onion Soup

This amazing recipe comes from experimenting with what we had left in our fridge. In our family we call it a 'use what's in the fridge soup'. We have stumbled on many great recipes this way and encourage you to get creative, especially now with being at home social distancing. Stay healthy and safe out there! Lots of love from team Naledo

What you'll need:

3 Tbsps of Vegetable oil (for frying the onions)

6 large yellow onions chopped

10 small heirloom potatoes cubed

6 mushrooms sliced

1 sprig of fresh rosemary

4 cubes of broth of your choice - we used vegetable broth

1 garlic clove chopped

1 cup wild rice (the dark long grain one)

1 Tbsp Truly Turmeric


Garnish:

1 tsp soft cheese (we used goat cheese)

a little rosemary


Method:

Fry onions to golden brown

Add garlic

Add potatoes

Add 8 cups of water and broth cubes

Add mushrooms

Add Truly Turmeric and rosemary

Cook for half hour on a simmer

Garnish with rosemary and goat cheese
